Cervaro della Sala (2019) is a famous Umbrian white wine that takes its name from the noble family that owned Castello della Sala during the 14th century: the Monaldeschi della Cervara. This wine is born from the assembly of Chardonnay grapes and a small part of Grechetto, then aged in barrique for 5 months.
A wine with intense notes of citrus, pear, white flowers and vanilla, elegant and soft on the palate with long nuances of toasted hazelnut and acacia on the finish. Sapid, fresh and structured, Cervaro della Sala was one of the first Italian white wines to try malolactic fermentation with aging in barrique in 1985.
